Pecan Flax Coconut Granola

I like to sprinkle granola on my yogurt.

This homemade version is  easy to make, has wholesome ingredients and is inexpensive compared to the costly name brands.

Ingredient List

Dry 
  • 2 cups quick or old fashioned oats 
  • 1/4 cup flax meal 
  • 1/4 cup pecan pieces 
  • 1/2 cup coconut
Wet
  • 2 tablespoons coconut oil 
  • 2 tablespoons honey 
  • 1 tablespoon brown sugar 
  • 1 tablespoon water 
  • 1 teaspoon vanilla 
  • a sprinkle of sea salt
Method 

Combine dry ingredients.

In large skillet melt coconut oil, honey and brown sugar; add the rest.  Mix well.

Add dry mixture, tossing to coat.

Pour onto greased sheet pan (one that has sides) and bake in a preheated 300 degree oven for 20 minutes.  Stir.

Bake 5 minutes.
Stir.

Bake 2-6 more minutes, until golden brown
Stir.
Allow to cool.

Store in a lidded jar.

Each tablespoon (8 grams) is 30 calories.

You can substitute any kind of oil for the coconut oil or even use butter.
If you don't keep flax meal on hand you can substitute nuts or add additional oats.

If you don't like coconut you can replace it with any of the dry ingredients.
