Kidney beans are a good carb, a slow carb.
They are cheap and easy. For a quick meal make this:
- 1/2 cup of kidney beans drained
- one hard boiled egg diced
- a teaspoon of sweet pickles or relish
- 2 teaspoons mayonnaise
- 1 teaspoon diced onion
