To spice the drinks I used a mulling spices in a tea bag I found at Trader Joes. You use one tea bag per 8 ounces of beverage.<br />

Option 1:<br />

1 part sucralose sweetened tea, 1 part 50%/Light Cranberry Juice (Great Value Brand, it's sweetened with sucralose and other juices), and one mulling spice bag per 8 ounces liquid. Steep 5 mins.<br />

<br />
Option 2:<br />
<br />
One part unsweetened tea, one part 50%/Light Cranberry Juice and two parts prepared Crystal Light Peach Mango Green tea, and one mulling spice bag per 8 ounces liquid. Steep 5 mins.<br />
<br />
<br />
Note: I find the Crystal Light Peach Mango Green tea to be very sweet, hence I use unsweet tea. You may prefer it sweeter than I do, if so, use sweet tea.<br />
<br />
If you can't find the mulling spices tea bags, you can use your own spice mixture and strain it. The bags I found at TJ's had cinnamon, clovers, ginger, orange peel and lemon peel. It looked like a powder in the bag.<br />
<br />
There are commercially prepared mulling spice powdered mixtures but they are all sweetened with either sugar or other sweeteners. Or you can use this to fill small bell peppers or celery if you want to limit carbs.<br />
<br />
Alternatively you could make it into a cheese spread for crackers or as a dip for celery. If it's too thick thin it with a bit of milk or preferably cream. Don't add more ranch, it may make it too salty.<br />
<br />
I like it best rolled up in a tortilla and sliced.<br />
<br />
Method: to softened cream cheese add enough Ranch salad dressing to flavor the cream cheese and soften it, making it easy to spread. You don't want it runny so don't add too much. To this, add the grated cheese and bacon bits. That's it.<br />
<br />
Spread this onto the tortilla, and roll it up, Wrap in plastic wrap and chill for a couple of hours or longer, if you plan on slicing it. Alternatively, if you wish to eat it right away, skip the chilling and slicing process.<br />
<br />
For vegetarians you might try replacing the bacon with imitation bacon.<br />
<br />
For pescatarians try some chopped shrimp, adding a bit of liquid smoke for a bit of smokiness<br />
<br />
Not a fan of bacon? Ham might be a good sub for the bacon. And chicken, might work too; again I'd add a bit of liquid smoke with the chicken.<br />
<br />
When ready to serve, if slicing, place on a festive platter or tray.<br />
<br />
I found that the Ranch salad dressing added plenty of salt and flavor, so taste before you add salt or other seasonings.<br />
<br />
The beauty of this recipe, if you can even call it that, is that it's easy to make with stuff you probably have on hand.<br />

Note: you might make it into a cheese ball but if you do I suggest using the dry ranch seasoning so it will form a nice ball. <li>one 3 oz box pineapple or lemon gelatin</li>
<li>2 cups liquid (water or pineapple juice and water to equal 2 cups)</li>
<li>one 15 oz can crushed pineapple, drained ( I use the one in juice vs syrup) </li>
<li>2.5 cups of mini marshmallows</li>
<li>one 8 oz carton Cool Whip thawed</li>
<li>4 oz grated sharp cheddar cheese</li>
<li>mayonnaise </li>
<li>pecans: optional, about 2 oz or more as desired. </li>
</ul>
<b>Method:</b><br />
<br />
In a saucepan drain pineapple and add enough water to equal 2 cups. Bring to a boil. Remove and add the marshmallows. Stir until they are melted. Add the drained pineapple and stir to mix.<br />
<br />
Pour mixture into a large mixing bowl and place in the fridge to thicken. (It should be thick like egg whites.)<br />
<br />
Once thickened remove, and fold in the Cool Whip. Make sure everything is completely blended. Be sure to fold gently so you don't deflate it. If you are using the pecans add those now.<br />
<br />
Pour into a glass 9x13 dish. (if you use metal it needs to be non-reactive like stainless steel). Not necessary to grease the pan.<br />
<br />
Place uncovered in the fridge and chill til set.<br />
<br />
When it's set, spread with a thin layer of mayonnaise. Sprinkle with cheddar cheese. Put back in the fridge, covered, until your are ready to serve it. It will be firm enough to cut into squares. <br />
<br />
Cook's notes: I have made this with sugar free gelatin and low fat Cool Whip( to make it lower in calories) with good results.<br />

It's also October which is Breast Cancer Awareness Month.<br /><br />My scary story began in 1992. In May I had a normal mammogram. Two months later I found a lump in my breast. I made an appointment to see my doctor.<br /><br />In his office he assured me it was nothing; that the mammogram I'd had 2 months earlier was definitive. He tried aspirating the lump, sure that it was a cyst. No liquid was extracted . He sent me home; told me to see him in one year. Like a good little girl I went home and followed his instructions.<br /><br />I trusted him. But every time I showered and felt that hard lump in my breast it bothered me. I ignored my discomfit.<br /><br />One year later I presented as advised. Once again he told me the lump was nothing. Said he was "100" paused, then said "99% sure it was nothing; but because you are anxious I'm referring you to a surgeon."<br /><br />A week later in the surgeon's office he was unable to palpate the lump. I located it for him, he palpated it, said he thought it was nothing but would do an excisional biopsy just in case. He numbed my breast, removed the lump and sent me home, saying they'd call when they got the results.<br /><br />I went home and waited. A week passed. Co-workers kept asking me if I'd heard anything. I had not and felt that it must be fine, assuming they'd have called me right away if it were malignant.<br /><br />Almost two weeks later I got a phone call. My doctor's nurse told me the biopsy was malignant; I had infiltrating ductal carcinoma of the breast.<br /><br />You could have knocked me over with a feather. I could hear my heart beating in my head and I almost passed out.<br /><br />I won't bore you with the details of what happened after that. Suffice it to say I was terrified. The tumor that was large enough to palpate in my breast had been there for a very long time and the chance of metastasis was great. I was very scared.<br /><br />A month later I had a bilateral mastectomy and 17 lymph nodes were removed. They were clear. Other tests did not show metastasis, The cancer was low grade and neither chemo nor adjuvant therapy was advised.<br /><br />I was lucky. <br /><br />The correct protocol, that my doctor should have followed, would have been to send me for an ultrasound of my breast. That would have revealed that I had a tumor, not a cyst. </span></b><br />
<br />
<b><span style="color: orange;">Because he made an assumption, that proved to be wrong, it is highly likely that he spread the cancer from the ducts into the adjacent breast tissue during the attempted aspiration. Had he left it alone it most likely would have been in-situ breast cancer (fixed in place, instead of invasive).<br /><br />Once an ultra sound proves a lump to not be a cyst the next step is biopsy asap. </span></b><br />
<br />
<b><span style="color: orange;">You do not advise a patient with a lump in her breast to wait ONE YEAR to recheck. At the very least my doctor should have advised me to return in 6 weeks or 3 months. NOT ONE YEAR.<br /><br />The lesson I learned that day is do not assume your doctor knows what he is talking about. AND always listen to your gut. If your gut says something is wrong LISTEN.<br /><br />I am still alive 24 years after finding that lump BY THE GRACE OF GOD and no thanks to a doctor who was a very good doctor with a prestigious clinic. Granted, doctors are human, they are not GOD; but there is protocol and they should follow that protocol.<br /><br />One thing that made the experience so hellish for me is that a whole year had passed with me having a malignant tumor in my breast. When it was removed it was 2 cm, the size of an olive. That's a big tumor. I lived, for years, in fear of recurrence, because the tumor was large and removal was delayed.</span></b><br />
<b><span style="color: orange;"></span></b><br />
<b><span style="color: orange;">I also learned, after the fact, what the correct protocol is because I never questioned my doctor.</span></b><br />

<b><span style="color: orange;">Don't make the mistakes I did. Take nothing for granted. Question what you are told. If a doctor resents your questions, find another doctor. </span></b><br />

<b><span style="color: orange;">The vast majority of breast cancers are found by women, not by mammograms. </span></b><br />
<br />
<b><span style="color: orange;">If you are pre-menopausal it's very important that you do self exam because you have dense breast tissue and tumors sitting in dense breast tissue don't show up well on xray. </span></b><br />
<br />
<b><span style="color: orange;">After menopause you have mostly fatty tissue and that is why mammograms are great for older women: those tumors show up well in fatty tissue.</span></b><br />
<br />
<b><span style="color: orange;">And that is my scary story. </span></b><br />

<li>3 ounces cabbage slaw mix(contains green cabbage, red cabbage, and carrot)</li>
<li>3 ounces baby spinach</li>
<li>1 rib thinly sliced celery</li>
<li>1 cup well drained crushed pineapple</li>
<li>sliced almonds, as desired </li>
</ul>
In large bowl combine cabbage mix, baby spinach, and celery. Top with the pineapple. <br />

Salad Dressing<br />
<ul>
<li> 10 T mayo</li>
<li>2 tsp toasted sesame oil</li>
<li>1 tsp honey mustard</li>
<li>4 T honey</li>
<li>2 T white vinegar</li>
<li>dash sircacha optional</li>
</ul>
In small bowl combine mayo, honey, mustard, oil and siracha. Mix together. With a small whisk blend the vinegar a tablespoon at a time until smooth.<br />
<br />
Drizzle over salad.<br />

You can adjust the amounts of the ingredients to suit your personal preference. If you're not a fan of pineapple, mandarin oranges or diced canned peaches make a good substitute. <br />

On a plate or shallow bowl layer the above ingredients. Drizzle with the vinaigrette and sprinkle a few apple chips around the edges.<br />

<i>Vinaigrette Recipe: In a deep bowl whisk together 2 tablespoons of<b> sugar </b>and 2 tablespoons of <b>apple cider vinegar</b>. Add <b>salt</b> and <b>pepper</b> to taste, and a heaping teaspoon of <b> honey mustard</b> (or more if you prefer; you can taste and adjust at the end). </i><br />

<i>Whisk together briskly, while dripping in 5 tablespoons of <b>canola oil</b>. (You can use any mild tasting oil. If you use olive oil use light olive oil. Regular olive oil has a taste that will overpower the taste of the other ingredients.) </i><br />

As an option you can thin with apple cider or replace some of the oil with apple cider to reduce fat calories.<br />

***Apple chips are not dried apples. They are crunchy chips that look like potato chips. They are usually found in or near the produce section of your grocery store. Yesterday was good Friday. Good for us and good for Jesus. Many don't understand how the crucifixion was good in any aspect.<br />
<br />
Jesus the Christ came down from Heaven to earth on an express mission.
His mission was to die, to shed his blood, to pay once and for all the
penalty of our sins. Thus he did at the cross. He took on him the sins
of the whole world-- past, present and future. He took our place that
we might not have to pay that penalty. He fulfilled his mission, so in
that respect it was good for him. Had he not gone to the cross he'd
have failed in his express mission.<br />
<br />
And for us the crucifixion was good because he paid the ransom for our
freedom--freedom from the bondage and penalty of our sin. He took our
stripes and by His stripes we are healed.<br />
<br />
But this process of redemption only began at the cross. After his death
on the cross, he was taken from the cross, placed in a sealed tomb
guarded by Roman soldiers. It was certain death for them should they
allow his body to be taken. So they guarded it with that in mind.<br />
<br />
Lo--on the third day the stone was rolled away and his body was not
there. The grave clothes were there, but no body. He had risen from
the dead, thus proving that he was indeed God incarnate.<br />
<br />
His death and resurrection was observed and recorded by many...500 at
one time, and many many others at various times after the
resurrection.....right up until he ascended on high.<br />
<br />
He is not dead for he is risen. He is risen indeed.<br />
<br />
Why did he come to earth? This verse from the New Testament of the Bible sums it up:<br />
<br />
"For God so loved the world, that He gave His Only Begotten Son (Jesus),
that whosoever believeth in Him, should not perish, but have
everlasting life." John 3:16<br />
<br />
How shall we believe in him whom we have not seen? Faith, dear
readers. It is by faith--faith in the finished work of Jesus the
Christ-- that ye are saved, through grace, and that not of yourselves.
It (your salvation) is the<b><i> gift </i></b>of God, and not of works, lest any man should boast.<br />
<br />
We can not earn our salvation. Entrance to heaven is not achieved by your good deeds outweighing the bad ones.<br />
<br />
Entrance to heaven--salvation--is a free gift, to be received by those
who will believe on his name. As it is written in the Holy Script:
whoever shall call upon the name of the Lord (Jesus Christ)<i> shall</i> be saved.<br />
<br />
That is the glory of Easter. That God so love us, he came down, not to
condemn the world, but that the world through him might be saved.

He died in 1990 and I miss him still. I will always miss him.<br />

As a little girl, I remember being the apple of his eye.<br />
<br />
One thing I knew as certain as anything is possible to know: I was loved by that man I called daddy.<br />
<br />
He didn't believe in spanking. He believed it was impossible to love a child too much.<br />
<br />
And he spoiled me with love.<br />
<br />
Being loved THAT much made me never want to disappoint that love, and I tried my best to never do that.<br />
<br />
I'm sure there were times when I did, but daddy never mentioned it.<br />
<br />
If I could go back, there are things I'd have done differently of course.<br />
<br />
But I can't. Hopefully I have learned from the past.<br />
<br />
Daddy taught me many things, but these stand out the most:<br />
<br />
1. You can never have too much education. Get a good education. Why? Daddy only had a 5th grade education because he had to quit school to help out at home after his father died.<br />
<br />
2. When you can't do the best thing, do the second best thing. Daddy came of age during the Great Depression. Unable to find a job, he rode the freight trains, lived in the hobo jungle and had to beg, at times, for food. It affected him for life. Some of it haunted him for life. He was always sensitive to those in need, especially women and children.<br />
<br />
3. Daddy loved mamma. He used to tell me 'your mother is a wonderful woman". He adored her. They divorced when I was 13, but he never stopped loving her.<br />
<br />
4. Family is important. Daddy was a family man, loved his family dearly, worked hard to provide for us, out in the weather building tanks and water towers. That work required a lot of moving around. When he tired of that, he'd buy a restaurant and run it to make a living. He was the chief cook and bottle washer and mamma waited tables. Daddy loved cooking and was a good cook. He was passionate about food preparation. At times he was a chef--wearing the tall white hat and the white jacket and apron with the tiny black and white checked pants--in a fancy country club.<br />
<br />
5. It is important to dress properly. Daddy didn't have anyone to teach him about how to dress as a young man. He made a point to ask another man-- who was a sharp dresser--how to dress. I remember in my younger years that daddy wore those pleated dress pants, and a crisp white shirt with a collar and nice polished shoes. But no hats. Hats on men were popular in that time period, but daddy did not wear them. I have a picture of daddy when he was 36--before I was born--and he reminds me of Frank Sinatra and Dean Martin.<br />
<br />
6. Love unconditionally. Anyone daddy loved, he continued to love no matter what. And he always appreciated those who loved him. I'm pretty sure he felt like a failure in so many ways. He felt things deeply, grieved deeply, but never talked about it. It took a toll on him. But no matter how bad he felt inside, he never took it out on others. He was not vindictive or vengeful. If he got down, he might be low for awhile. But soon, he'd be looking on the bright side, ready to pick himself up and start all over, with a new hope and a new dream.<br />
<br />
I miss you daddy . And I love you. And I always will.<br />

This is mamma with a tour group in Alaska--hence the name tag around her neck. She is trying not to smile here and she hated having her picture taken. But this truly depicts mom's sense of humor which was always just below the surface. Oh how I miss her. </div>
