Food Favorites

  • Cold Cardamom Coffee with Fudge Striped Cookies or Chocolate Covered Graham Crackers
To make the coffee:  1-2 tsp instant coffee, dissolve in small amount of warm water in a glass.  Add ice as desired.  Fill 2/3 with cold water. Add sweetener to taste if desired.    Stir. Fill the rest of the way with frothy milk (or a combination of coconut almond milk and cow's milk).  Sprinkle with cardamom powder.  Stir before drinking.

  • Cornbread Ranch Salad
In a bowl place sliced cucumbers, grape tomatoes that have been halved, and crumbled cornbread.  Drizzle with Hidden Valley Original Ranch Dressing.  Stir to combine. Top with grated Cabot Seriously Sharp White Cheddar Cheese.  Options:  diced onion, salt and pepper to taste.

  • Not Your Same Old Beans, Greens and Taters
Baked sweet potato, butter, salt and pepper, heated canned black beans, grated cheddar, sour cream served w/ a side of turnip greens.

  • Apple Prune Salad
One serving diced apple, a couple or three prunes quartered, walnuts, sliced celery, dressed with softened almond butter mixed w/ a little Carlson's Lemon Flavored Fish Oil.

  • Easy Winter Fruit Plate for 2
 Peel one banana; slice thick chunks on the diagonal.  Peel a navel orange, slick in half vertically, lay each half on its cut side and slice  into half moons.  Dice about 6 prunes.  Chop about 6 walnut halves.  Arrange the banana and orange on a plate, then sprinkle w/ the nuts and prunes.  No dressing needed.  This will make you want to eat your fruit.

  • Baked Bean Salad
Makes your favorite baked beans.  On a bed of mixed greens add a serving of baked beans, some chopped cucumber, grated cheddar and ranch dressing.  This is so good--you will want more.

  • Canned Beans Made Tastier
In a small saucepan add a bit of oil, chopped onion and garlic, saute briefly.  Add one can of cannelini beans (these are white kidney beans). Bring to a boil and add a good pinch or two of ground sage.  Cook for a couple of mins until hot.  Remove from heat.  Drizzle is some good olive oil.
