Big Mexican Flavor Little Damage

I was craving some Nachos the other night but didn't want to eat anything heavy, with a high calorie total. So I opted for this: a few tortilla chips spread on a plate, topped with one wedge of Laughing Cow Light cheese crumbled over the chips, all nuked just enough to heat the cheese. A good douse of hot sauce and some pickled jalapeno slices and I was in Nacho heaven.

Fast forward to breakfast. Still craving Mexican food, here's what I came up with. In a microwave safe bowl I beat an egg with a little water, salt and pepper, then nuked it on 50% power until set. I topped that with a half of one slice of American Cheese (the individually wrapped kind that's 70 calories for a whole slice), breaking the cheese into bits so I could cover the egg and speed the melting of the cheese atop the hot egg. Again, I doused it with hot sauce and pickled peppers.

Since I first discovered how tasty a meat sandwich is minus the mayonnaise replacing it with a wedge of LCL spread on the bread and adding pickled peppers and dill pickles, I have realized how much more satisfying foods are when they are spicy. Bland foods, I've discovered, don't satisfy the mouth hunger.

Laughing Cow Light Cheese is a calorie bargain. If you haven't tried it, you may want to give it a taste. I like it spread on a whole wheat pita that has been toasted, topping the LCL with some jam. Another flavor pleaser.
